Many years ago on vacation in Barcelona, my husband and I, fully jet lagged and absolutely ravenous, stumbled out into the city to find a cocktail and a nibble. We ended up at a quaint little bar that served heavy drinks and light bites. After pointing at just about everything on the menu and having little concept of what we actually ordered, out comes a charcuterie board.

It was love in the purest form. From the salty olives to the Spanish ham, and oh, the Manchego... it was one of the best meals we've ever enjoyed. Yet, it wasn't even a meal. I think that's what we loved about it; the simplicity of it all. Each bite was different and full of flavor and savoring it in a beautiful city with spectacular views enriched the whole experience. I've been chasing that feeling ever since.
